Temperature range : -12ºC to 40ºC
Stony and very dry soil.
   
Elaboration: The must is sent to stainless steel vats where a cold film maceration is carried out at 5ēC for 72 hours. The grape is fermented with a selected yeast at constant temperature of 25ēC for a period between 7 and 10 days, prolonging the maceration 10 days more.
   
Aged in cask: 12 months in new American and French oak barrels.
   
Tasting notes: Excellent depth of cherry red, very dark. On the nose, black fruit, milky hints, vanillas and roasted aromas. Aromatic and persistent end.
   
Recommendations: Red meats, lamb, pork, big game.
